1/4 C of Oil
1/2 C of Sugar
1 tsp of Salt
1/2 C of Milk
2 C of Flour
1 Tbsp of Baking Powder
Heat oven to 400. Grease bottoms of 12 muffin cups. Beat egg, stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.
Fill muffin cups 2/3 full. Bake 20 – 30 minutes.
I like to add diced fruits, grated orange rind, oatmeal, whole wheat, nuts, bran, or wheat germ. Cheese is also great!
